Default deer meat recipes

Does anyone have recipes for deer hamburger, roasts etc (that doesn't have a gamey taste when you're done cooking it)?

We eat deer meat 3 or more times a week. For the burger, we just season it the way we would beef. For chops, steaks, and roasts the secret is to put the meat in cold water and let it bleed out overnight. This will keep it from tasty gamey. I also cook mine mostly in the crock pot with other seasonings, rubs, or sauce.

I like deer meat in spaghetti and chili. The only other deer meat I have had are cube steaks, we marinated them in italian dressing w/a little bit of Dale's seasoning, then grilled them. They are also really good prepared that way and wrapped in bacon. You can also fry the cube steaks and serve w/gravy. I haven't had any roasts, sorry I don't have any advice!

I love using deer burger. That's about the only thing I use. When you get your deer burger, do they mix it with hamburger? If not, then yes it will taste very gamey. If they do, then try adding more yourself.

When I make a meatloaf I make 1 lb hamburger 1 lb deerburger
Chillie (I just did this today!) 1 lb hamburger 1 lb deerburger 1 lb turkey
Meatballs 1 lb deerburger 1 lb sausage

Get the point? Mixing the deer burger with another meat really adds flavor to your meals as well as "disguises" the taste.

For deer burger, try mixing it evenly with beef. This will not only remove the gamey taste, but also adds fat to it as deer burger is even leaner than 93% beef burger. Another tip is to BBQ it.

As for steaks and chops, try marinating it in either butter milk or Pepsi over night. And just before cooking, remove as much of the fat as possible from the meat. Then cook as usual.

For roasts, cut a slit in the center and stuff a few slices of uncooked bacon in the center, or lay several slices of bacon over the top and wrap in foil before baking. Though I've never tried it, I hear you can also do the same buttermilk or Pepsi soak on the roasts as well. (Something about the buttermilk neutralizes the wild taste.)

Breakfast sausage, try mixing with equal amounts of pork sausage.

For polish dogs, cook with saurkraut.

It definetly has a different taste than beef, but we've always managed to fool our friends who swear they would never eat Bambi. Even with the summer sausage, which you can't do much doctoring with. A lot of the gamey tastes have to do with your processor and what they use to cure and prepare the meats. Also, the deers sex. Does are much better eating than bucks.

The gamey taste is what makes it so good! Otherwise I'd just eat beef.

Let the meat bleed out in cold water the night before while the meat is soaking in the water add vinegar this will take out the game taste

I make baked steak and gravy with the round steaks. I put it in the crock pot with a can of cream of mushroom, can of water and a pack of brown gravy and cook it all day on low. Mmm good!

Also, I use the deer burger for tacos, spaghetti, and chilli.
