Does anyone have a good recipe for freezing potato soup? I would love the convenience.

Use frozen hash browns and make it fresh. It cooks in about 20 mins.

This is how I make mine but I have never frozen it:

This started out as a Kraft foods recipe but I have tweaked it.

Bacon Cheddar Potato Chowder

3 cups fat free milk
1 can (10.75 oz) condensed cream of potato soup
2 cups frozen hashbrowns
1 cup shredded cheddar cheese
3 slices bacon, cooked, drained and crumbled

Mix milk and soup in large sauce pan. Stir in hashbrowns. Cook on medium heat until warm. Add bacon and cheese, stirring. Cook on medium to low heat for 10 minutes, stirring frequently.

I would add to be sure you watch this as mine tended to burn on the bottom a bit. It was very easy and super yummy!
