Cooks Magazine just did an article on this. They test all the different methods then write about them.
They said to double wrap the bread. When defrosting it, let it defrost upside down in the refrigerator, then wrap it in foil (that can be your first layer in the freezer if you like), and bake it a few minutes in the oven. When it comes out, it is just like fresh.
BTW, I keep my bread in the refrigerator. It stays fresh - and doesn't go moldy.
