Cornflake Chicken Fingers

1 c crushed cornflake cereal(measure after crush)
1 Tbs parsley
1/4 tsp salt
1 lb boneless skinless chicken breast halves
1/3 c ranch salad dressing, plus more for dipping
2 tsp water
1-2 tsp hot pepper sauce,opt
Line a cookie sheet w/foil.
Mix cornflakes, parsley, and salt in a pie pan.
Mix 1/3 c ranch, water, and hot pepper sauce in a large mixing bowl.
Cut chicken into long strips, trim fat.
Drop the chicken strips into the wet mixture and stir to coat well,then roll into the dry mix.
Set on cookie sheet,freeze til firm-about 2 hours.
(you can store in a freezer bag for about a month,then store in airtight freeezer containers)
Preheat oven to 425,put frozen chicken fingers in a single layer on a lightly greased foil lined jelly roll pan (or large cookie sheet with sides)Bake 18-20 min from frozen til no longer pink inside and outside is golden.
