It's a "MOMMYSAVERS PANTRY" Challenge:

Chances are many of you have these commonly stocked frugal ingredients in your pantry already. They’re true grocery bargains. But what can you do with them? Here we’re challenging you to post as many recipes as you can using what we have in our “Mommysavers Pantry” this week. Can you whip up a delicious pasta dish? A yummy chicken gourmet meal? Let’s see what you’ve got!



In our “Mommysavers Pantry”
Rice, pasta, tomato sauce, kidney beans, black beans, onions, carrots, garlic, celery, potatoes, chicken, ground beef, frozen broccoli, frozen peas, milk, butter, oil, eggs, chicken broth, Cheddar cheese, Parmesan cheese, lemon juice concentrate, flour, sugar, salt & pepper.

Rules:
Recipes can only use the items listed above, although common spices can be used as well.
Entries must be original (not taken from other sites) and include all necessary instructions
Recipes must be less than $10 total
Enter as often as you’d like
Moderators are also eligible
Enter before noon CST on April 30th
Winner will be announced on May 1st

Beef-n-Cheddar-roni:

We didn't have much money growing up so my mom always made us this recipe, with my own variation:

1 package of pasta (boiled till cooked) - $1
1 lb of hamburger - $3
2 cans of tomato sauce - $1
2 cups of shredded cheddar (1 package) - $2
1 teaspoon of the italian mix spices (or divide to use basil, oregano, and garlic) - 10 cents

Bascially, you just use the pot you boiled the pasta in. Throw all of the ingredients in there. Make sure you reserve 1 cup of cheddar cheese for later. After the ingredients are mixed well, put into a greased baking pan. Top with extra cheddar. Bake on 375 for about 45 minutes (or until cheese is melted)

Chicken-n-Rice Soup:

Favorite for winter mostly, but also for those springtime colds! It's also a good use for leftover rice from last night's meal of from chinese takeout (we always seem to have extra white rice!)

2 cups of cooked rice - 50 cents
1 lb of boneless chicken breast - $3
1 medium onion - 50 cents
1/2 teaspoon of minced garlic - 25 cents
2 carrots, sliced - 50 cents
1 stalk of celery, sliced - 25 cents
3 cups of chicken broth - $1.50
1 bay leaf - 5 cents
salt and pepper to taste

Basically, you just throw everything, except the rice into a pot on the stove, medium heat. After the chicken is cooked through, take it out, cut up into bite sized chunks, throw that back into the pot. The veggies should be cooked well by this time. So throw the rice in, let simmer for 10 minutes or so, and serve!

Shephard's Pie:

Mashed Potatoes -
4-5 potatoes, peeled and sliced - $1.50
1/4 cup of milk - 25 cents
2-3 tablespoons of butter - 25 cents
salt and pepper to taste

Filling-
1 lb of browned hamburger - $2
1 package of frozen peas - $1
2 cans of tomato sauce - $1
2 crushed bay leaves - 10 cents
1/4 teaspoon of oregano - 5 cents
1/4 teaspoon of basil - 5 cents

Topping -

1 cup of cheddar cheese - $1

Boil the potatoes, until falling apart. Drain and mash with a potato masher, adding the milk, butter, salt, and peppper. Set aside

Mix together the ingredients for the filling. Pour into rectangular baking dish. Spread the mashed potatoes on top, then top with cheddar cheese. Bake at 375 for about 45 minutes or until cheese is melted and starting to crisp on top! =)

Cheesy Rice

Ingredients: (under $10.00)
One can of Chicken broth 1.00
2-cups of Rice 0.50-1.00
Frozen Broccoli free-1.00
4 oz Cheddar Cheese (1.99 for the full block)
Parmesan cheese 6 TBL (1.99 for the full container)
2-Chicken Breasts (1.99lb so about 2.50)

Directions:
Cook the rice in a can of chicken broth according to rice package.

Coat the chicken with 5 TBL of the Parmesan Cheese and Pepper. Cook it in a pan over low heat till heat through.

Cook your broccolli, the way YOU like it, unseasoned though. When done sprinkle on the last 1 TBL of parmesean cheese.

Cubed the chicken into small pieces.

Arrange your items on the plate like so, Rice then chicken and brocolli on top. Put the shredded cheese on the TOP and microwave it till melted. SERVE.

Cheesy Pot-Pie

Ingredients:
2-3 Stalks of Celery (0.99)
1 Small Onion (0.69 for the 3lb bag)
1 med carrot (0.69 for the 2 lb bag)
2-2 1/2 cups cubed, cooked potatoes (0.99-Bought on sale-5lb bag)
1-1 1/2 cups cubed, cooked chicken (1.99 lb-so about 1.00)
8 oz Shredded Cheddar Cheese (1.99)

Directions:
Saute celery, onion, and carrot over low heat (with a little butter/oil).
Take potatoes and add them to the pan to brown up on most sides, sprinkle with salt and pepper.
Once, almost browned take cooked, cubed chicken and add to pan till warmed up.
Put cheddar cheese on top and cook till cheese is melted, Mix through a little. Serve.

Quick Bolognese Sauce

2 tbsp. oil
1 stalk celery, chopped fine
1 medium carrot, shredded
1/2 onion, diced
2 cloves garlic, minced
1 lb. chopmeat
1 28 oz. can tomato sauce
1/2 tsp. basil
1/2 tsp. parsley
salt & pepper to taste
1/2 C. parmesan cheese
1/2 C. milk

heat oil in large skillet over medium heat
add celery, carrots and onion
cook until vegetables are soft, but not brown
add garlic and cook one more minute
add chopmeat to pan and cook until browned, drain off fat
add sauce, basil, parsley and salt and pepper to taste
simmer 20-25 minutes
add parmesan cheese and milk and cook 2 more minutes, just until heated.

Serve over pasta and top with extra parmesan cheese if desired.



ETA- I know it sounds expensive, but if you figure price per portion of the ingredients used, it should come in under $10.

Tarragon Chicken

4 to 6 boneless chicken breasts
salt to taste
1/2 tsp tarragon
4 to 6 tablespoons of butter, melted
1 to 1 1/2 cups water

Lightly salt chicken breasts and place in casserole dish. Sprinkle tarragon over chicken. Drizzle butter over chicken and add water to cover the bottom of the casserole dish. Cover tightly. Bake at 325 for approx. 1 hour or until the chicken is tender. Serve over fluffy white rice, using the cooking broth as a sauce.

This is great comfort food.
