Recipe of the Week: Be sure to add these to your shopping list if you are low!

ISLAND CHICKEN



2-3 lbs. bone-in split chicken breasts, thighs, drumsticks or a mix
• 1/3 cup lite soy sauce
• 1 small onion, chopped
• 3 cloves garlic, minced
• 1 Tbsp. curry powder
• 1 tsp. minced fresh ginger or 1/2 tsp. ground ginger
• 1/4 tsp. ground red pepper





Steps:
Prepare a medium-hot fire in grill. Meanwhile, mix together marinade ingredients (thin with a little water if too thick). Remove skin from chicken if desired. Place chicken on prepared grill. Baste chicken with sauce and continue cooking, turning and basting with sauce approximately every 10 minutes. Internal temperature of breast should be 170°F and thighs and drumsticks should be 180°F. Serve with a cool pasta salad and tossed greens
