Default Delicious Rhubarb Recipes.....?

I have some rhubarb that I need to start using and have a rhubarb bread recipe to try, but curious if you have a recipe w/ rhubarb in it that you love?

Default Oatmeal & Rhubarb bars

Crust:

1/2 cup chopped pecans
1 1/2 cups rolled oats
1 cup brown sugar
1/4 teaspoon salt
1 1/2 cups flour
1 cup butter or shortening
1/4 teaspoon baking soda


Filling:

3 cups chopped rhubard
1 1/2 cups sugar
2 tablespoons cornstarch
1/4 cup water
1 teaspoon vanilla

Combine all ingredients for crust and mix until crumbly. Pat half of the mixture into a 13x9x2 inch baking pan.

To prepare the filling, combine rhubarb, sugar, cornstarch and water in a medium saucepan and bring to a boil; reduce heat to low and continue to cook, stirring frequently, until mixture is clear. Stir in vanilla.

Pour filling over crust. Sprinkle with the remaining crumb mixture.

Bake for 20 minutes at 350°F. Allow to cool before slicing into serving sized bars.

Default Rhubarb & Strawberry delight

2 cups strawberries, hulled & quartered
2 cups rhubarb, chopped
3/4 cup rolled oats
1/2 cup brown sugar, packed
1/2 cup walnuts, chopped
4 tablespoons canola oil

Toss together strawberries and rhubarb. Place in the bottom of a pie or casserole dish. In a mixing bowl, mix together oats, brown sugar, walnuts, and oil. Sprinkle mixture over fruit. Cover lightly with aluminum foil and bake in a preheated oven at 375°F, about 40-45 minutes, or until golden brown on top.

1 egg, slightly beaten
1 c. sugar
3 tbsp. flour
1/2 to 1/4 c. water
1 tbsp. butter
3 c. rhubarb
9 inch pie shell

Prepare 9 inch pie shell, unbaked
Cut rhubarb into 1/2 inch pieces. Mix all ingredients except rhubarb. Place cut rhubarb into shell. Then pour mixture over rhubarb. Bake at 375 degrees for 45 minutes.

ruthie I am glad you had some recipes.I remember my mom going to the garden getting it and making pie.I did not like it so I have never done anything with it
