I am posting this because I am looking for new ideas for meals.
I have a 4yr. boy in my daycare newly diagnosed with diabetes.
I am looking for low carb breakfast meals, low carb lunches, and 15 carb snacks for in the afternoon (not including juice.)
I welcome all advice and help. It's all new for me!

I myself being diabetic just have a few things to recommend,, not actual meal plans, but hopefully it helps.

Dreamfields pasta is AMAZING. Use it in place of whatever pasta and the added inulin fiber TRULY does cut the blood impact. I can eat a full serving *plate almost* of spaghetti using these noodles and it does NOT IMPACT my blood sugar. It's very 'odd' because the carb listing in the nutritional label is still like 40 or some such, but the added fiber DOES make the '5 digestible carb' claim or whatever it says, TRUE!!

For an ice cream treat, the blue 'carb smart' ice cream does NOT impact my blood sugars at ALL either. It's amazing stuff. I haven't found a single other carb watching, etc one that doesn't, but the Carb Smart is 'safe' for me.

These MIGHT be 'personal' things and have a bit of a different impact on him, so I'd definitely check his sugars, but these items have saved me IMMENSELY from feeling deprived.

I'll think of other stuff as I can and post again if I think or remember something else.

Right now I'm doing weight watchers, so I've not been as 'focused' on my diabetes lately. I'll have to 'ponder'

Protein. More meat and cheese, less carbs. If you are providing carbs, provide them WITH a protein. Like apple slices w/ cheese or peanut butter. Cottage cheese with fruit. Low sugar yogurt.

I will watch for that brand as well!
Does the Super Target sell that brand?
