These are Super Yummy, they stay Super Soft and they are Super Easy to make. My DD actually is the one who makes them all the time. Since she learned to bake (and LOVES it) I hardly do any cookie baking anymore.
Super White Sugar Cookies
1 c. unsalted butter, room temperature
1 c. sugar
1 whole egg plus 1 egg yolk beaten together
1 tsp. vanilla
2 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
Preheat oven to 350*. In large bowl, using an electric mixer at high speed, cream butter and sugar. Add egg and vanilla and beat. With a mixer on low, add flour and other ingredients. Finish mixing with a wooden sppon, in necessary.
Roll dough into balls the size of a walnut. Flatten with a glass dipped in sugar or use a wet fork. Bake for 10 min.
Makes about 5 dozen.
