Super Simple, Flexible Corn Casserole

1 can of whole kernel corn (.89)
1 can cream style corn (.89)
1 block of margarine or butter (.50)
1 container of sour cream *8 oz* ($1.00)
1 box of Jiffy cornbread mix (.33)

Melt butter or margarine, use to grease pan.

Hand mix remainder of butter and all other ingredients.

Bake at 375 for approximately one hour

Can be doubled, tripled or even quadrupled.

Prices will vary a bit depending on your shopping habits, but basically can be done for under 4.00 per batch

This is good hot as a side dish, reheats well and is QUITE yummy as cold leftovers as a 'dessert or sweet breakfast' even

De-LIGHT-ful Brownies

1 box of packaged brownie mix (regularly on sale for .99,, low fat adds to the health advantage)

1 can of black beans (1.00)


Puree black beans in blender until liquified.

Add to brownie mix powder and stir well.

Bake according to box instructions time/temp.

YUMMY brownies that are very low in fat, and very high in fiber (2 ww pts each for a GOOD sized brownie)

Prep Time:50 min
Start to Finish:50 min
makes:3 1/2 dozen cookies

3/4 cup granulated sugar
3/4 cup packed brown sugar
1/2 cup butter, softened
1/2 cup canola oil
1 teaspoon vanilla
1 egg
2 cups Gold Medal® whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup miniature semisweet chocolate chips

1. Heat oven to 375°F. In large bowl, beat sugars, butter, oil, vanilla and egg with electric mixer on low speed until blended. Beat in flour, baking soda and salt until well blended. Stir in chocolate chips.
2. On ungreased cookie sheet, drop dough by rounded measuring tablespoonfuls about 2 inches apart.
3. Bake 7 to 9 minutes or until very light golden brown (centers will be soft). Cool 1 minute; remove from cookie sheet to cooling rack.

2 Cans Corn
2 Cans Creamed Corn
3 Eggs
1 package (row) of saltine crackers
2-3 Cups Milk

Preheat oven at 350 degrees. Drain regular corn and pour all four cans of corn into 9X13 pan. Beat eggs in bowl and pour over corn. Put saltines in a ziploc bag and crush. Pour crackers into pan. Mix all together and pour 2 cups milk in and stir. If it still seems dry you can pour the other cup of milk. You want to have a moist mushy mixture. If you pour to much milk - add a bit of crushed crackers. Fail proof - I know. Cook for 35 minutes. I never bring any of this home.

APPLE CAKE

1 3/4 c. sugar
1 1/2 c. oil
2 eggs
Cream the above ingredients with mixer

Add: 3 cups unpeeled apples (any)

Combine:
3 cups flour
1 t. salt
1 t. cinnamon
1 t. baking soda
Add this to apple mixture

Add 1 t. vanilla

Pour in a greased and floured bundt pan and bake 1 hr at 350.

This tastes so much like fall and serve a lot. Everyone loves this cake!

Easy Peanut Butter Cookies

1 c.sugar($1.85 for 5lb)
1 egg($1.30 for a dozen)
1 cup of peanut butter ($2.00 for small jar)

Mix ingredients together in bowl.
Pre heat oven at 325 degrees

Form cookies on cookie sheets. Bake for 15 min.

Pinwheel appetizers
These are always a hit at parties and you can change them to your taste. Here is my usual but you can mix it up by using different season and veggies.
1 package of tortilla shells
1 package of cream cheese
1 packet of ranch mix ( you know the powder kind)
nicely chopped green and red bell pepper. I use about a cup.
1 package of shredded cheddar cheese
mix the cream cheese and ranch and spread on each tortilla.
then sprinkle with the peppers and cheese.
roll tightly and make sure the end is kind of glued down by the cream cheese.
Then cut into pinwheels.

Cocktail Weinies
2 packages of smoked cocktail links
1 bottle heinz chili sauce
1 small bottle of welchs grape jelly
mix the two in a crock pot and add the links. cook until the sauce is smooth.
sounds gross but is very good.

Pickle rollups

Whole pickles $2.00
cream cheese-softened (whipped works good too) $1.50
Ham slices $2.50

Drain and wipe pickles. Spread cream cheese on ham slice. Place pickle on ham and cheese and roll up. Chill. Chilling rolls will make them much easier to cut. Cut into 1/2 inch slices just before serving. Repeat as needed.
Prep time: about 15 minutes
Chilling time: about one hour.
Servings: about three dozen
Cost: about $6. I am just guessing on the price.

Someone always makes these when we have get togethers. They may not sound very good but they are tasty.
