Default Suggestions for Roasting a Chicken

I need some suggestions for roasting a whole chicken. I usually cook breasts or pieces.

Here is M2M's recipe for cooking a whole chicken in the CP. It is the best. Just about the only way I cook a whole chicken anymore. I do have a Set it and Forget rotisserrie thing that I use for whole chickens too.

We keep it simple around here...sometimes I stuff the cavity with a halved lemon. Sometimes I do a halved lemon, fresh garlic and a bunch of fresh thyme. Sometimes I stuff it with onions (skin on and everything). Sometimes I just don't put anything in the cavity.

I always salt and pepper the outside, coat it with olive oil or softened butter and then roast at 425 until the juices run clear (about 1 1/2 hours for a 5ish pound chicken).

Spritz w/olive oil sprinkle on Italian seasoning, place in roasting pan. Bake at 350 for about hour with lid on then remove lid, cook about another 20 minutes or so to let the skin turn golden. I always use the juices to make gravy and stuffing.

Yum thanks for the suggestions I am going to try roasting it on Sunday. Tomorrow night I am spoiling my husband with crab legs. They are on sale for $4.99 pound right now so I thought I would spoil him.

I keep it simple too. Put a few pats of butter under the skin, pour some olive oil over it, salt and pepper. Bake at 350 - there should be timing directions on the wrapper. I dont stuff mine, thats just my preference. Just dont overcook it!

Thanks! I put my chicken in a casserole pan with a little water in the bottom. I rubbed it with butter, sprinkled a little salt, pepper and garlic. Baked in at 350 for 1.5 hours. It turned out perfectly! My DH said it was better than a store bought rotisserie chicken. I also wrapped a few potatoes individually in foil and baked them in the oven at the same time. It was a perfect dinner.
