Anyone have any good (and easy) German recipes to share, especially appetizers or snacks? We're having a birthday party for my brother who takes a lot of pride in our German heritage.

Mini-Ruben Appetizers
Total Time: 20 min | Prep: 15 min | 24 Servings

1 loaf rye cocktail bread
1 (16 ounce) can sauerkraut
1/2 lb corned beef, sliced very thin and quartered
1/2 lb swiss cheese, sliced and quartered
thousand island dressing
  1. Drain sauerkraut.
  2. Place coctail ryes on cookie sheet in single layer.
  3. Carefully place corn beef on each slice of rye.
  4. Add 1 tablespoon saurerkraut on top of corn beef.
  5. Squeeze a dash of thousand island dressing on top of saurkraut.
  6. Top with swiss cheese.
  7. Preheat oven to 350 degrees.
  8. Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.

Kielbasa in Bourbon

1 cup bourbon
1/2 cup brown sugar
1/2 cup catsup
1 link kielbasa

Cook kielbasa (slices). Heat sauce. Place meat in sauce.

Keep hot in small crock pot. Serve with party rye or crackers.

Chipped Beef Spread

8 oz. pkg. cream cheese
1 pkg. Dried Beef or Hormel jar
2 or 3 tbl. Horseradish
Few shakes Worcestershire Sauce
A little cream to help blend

Mix together and form log or put into small bowl. Serve with crackers

Corned Beef Canapes

3/4 pound sharp cheddar cheese, grated
12 ounce can corned beef, chopped
1 Tbls. Dijon mustard
1 Tbls. Worcestershire sauce
1 clove garlic, chopped
1 small onion, chopped
Mayonnaise
Cocktail rye bread rounds

Mix all the ingredients with enough mayonnaise to make it very moist. Spread on rye rounds. Put under the broiler until the cheese melts. Makes a bunch.

Hot German Potato Salad

10 slices bacon
½ cup chopped onion
2 tbl. flour
2 tbl. sugar
½ tsp. salt
Pepper
1 tsp. celery seed
½ c. vinegar
8 potatoes (boiled and sliced)
Parsley & pimento

Cook bacon until crisp; drain and crumble, reserving 1/4 c. fat. Cook onion in fat until tender. Blend in flour, sugar, salt, celery seed and dash of pepper; add vinegar and 1 c. water; cook and stir until thickened and bubbly. Add bacon and potatoes. Heat thoroughly, tossing lightly. Garnish with parsley and pimento.

German Honey Cookies (HONIGPLÄTZCHEN)

1/2 cup granulated sugar
1/2 cup butter
1/2 cup honey
1 egg
1 tsp. vanilla extract
1/2 tsp. baking soda
2 cups all-purpose flour
1/2 tsp. ground ginger

Preheat oven to 350°F.

Lightly grease cookie sheets or line with parchment paper.
In a saucepan, combine sugar, butter, and honey over low heat. When melted remove from heat and let cool.

Beat eggs, vanilla, baking soda and ginger. Slowly add to cooled honey mixture.

Gradually add flour. Drop by the spoonful on to cookie sheets about 2" apart.

Bake 12-15 minutes or until golden brown. Transfer to wire racks to cool.

Easy Beer Bread

2 cup self rising flour
3 tbl. sugar
12-oz beer
1 tbl. melted butter

Combine flour, sugar and beer. Stir until all ingredients are moist.

Pour into greased 9x5x3" loaf pan. Bake 375° for 30-35 min.

Brush with melted butter.

My Dad LOVES reuben sandwiches and this is his fave dip!!!



crock pot reuben dip....

1 (16oz)bag sauerkraut, drained (or can)
1 (8oz)cream cheese, softened
2 c shredded Swiss cheese
2 c shredded cooked corned beef
1/2 cup thousand island dressing

In a slow cooker, combine the sauerkraut, cream cheese, Swiss cheese, corned beef and thousand island dressing. Cover, and cook on high for 45 min.Stir occasionally while cooking.

Serve with cocktail rye or crackers.
