I am looking for new ways to make it.....it's one of my summer favorites but we always make the same things!!!

My dh will only eat it raw--yuck! But I usually just make pies or crisps w/ it, both of which I love! And I like just plain rhubarb, no strawberries or anything mixed w/ it, I like it tart!

Btw...how soon is rhubarb ready to pick? I can't remember, I just know my great aunt always calls me and says the rhubarb patch is mine for the summer, she got her bit she wants for this year!

1/4 c butter, softened (or you can use oil)
1 1/2 c packed brown sugar
1 egg
1 Tbs vanilla
2 1/3 c flour
1 tsp baking soda
1/2 tsp salt
1 c sour cream
4 c chopped rhubarb
1/3 c white sugar
1/2 tsp ground nutmeg
1 tsp cinnamon


Cream together butter or margarine and brown sugar. Beat in egg and vanilla.
Sift or stir together flour, baking soda and salt; gradually stir in to butter mixture. Fold in sour cream and rhubarb. Spoon batter into greased 9 x 13 inch glass baking dish.
Stir together white sugar ,cinnamon and nutmeg,sprinkle over batter.


Bake at 350 for 40 minutes, or until tester comes out clean.

rhubarb crisp and rhubarb slump cake yummy..

the rhubarb slump cake is easy you just take 6 cups chopped rhubarb 1 cup sugar and mix pour in a 9X13 pan then mix up any yellow cake mix and pour on top and bake to cake instructions yummy add a little coolwhip and your good to go!!!
