Baked fish (most often salmon) and rice (I like brown/wild, DH likes white)
Lentil soup/stew (probably not as often during summer)
Vegetable fritters
Grilled chicken and green salad
Pasta with tomato based sauce
Butternut soup
Campbell's tomato soup gussied up with Italian herbs, fresh garlic and cheese toasts

Certainly not every week but stuff we have regularily...

Roast Chicken or Turkey
Flank Steak/Strip Steaks
Pork Tenderloin (grilled, roasted etc)
Salmon/Swordfish
Pasta with Sauce
Macaroni & Cheese
Chili w/Rice
Black Beans, Rice & Empanadas
Chicken Caccitore
Arroz con Pollo
Stew (chicken or beef) w/Biscuits
Pizza (make your own)
Quesadilla (make your own - this is good for leftover meat and veggies)
Ceasar Salad w/Chicken, Steak or Shrimp (also good for leftover meat from the night before)

I make vegetables very simply - roast them with some olive oil, salt and pepper. I also steam them in my steamer basket or saute them quickly in a little oil or butter on the stovetop and then put the lid on to steam them done. We do carrots, green beans, snap peas, brussel sprouts, brocolli most often.

I make all our soups, sauces, stews etc homemade. I usually do a big batch and freeze in dinner size portions. Works well for us.
