It's really been an adjustment around here with me not eating meat. I had to rethink all our menus. I do a lot of leftovers from dinner which are usually things like stir fry over rice, pasta and sauce, vegetable soup w/ bread or soft pretzels, chili. A couple times per week I will have a premade veggie item like veggie burgers, veggie hot dogs or veggie "chicken" patties. But I am trying to cut down on them because they too are processed. I add in the usual pb&j. My youngest is the hardest to please, but he's getting better. One day I even got him to eat a yummy toasted sub with spaghetti sauce mozzarella and broccoli, it was awesome! Soon the garden will be going strong and we will be doing lots w/ zucchini like taco boats, or breaded w/ sauce or hot sauce. In the summer when it's hot sometimes it nice to just have a yogart and fruit smoothie or sliced veggies and cheese w/ crackers.

what about tortilla wraps using cream cheese instead of mayo?? I think it helps them stay rolled up better.
This is what we do for lunches:

lunchmeat roll ups, cheese slices and apples
fruit salad
pasta salad with Italian dressing
tortilla wraps; lunchmeat, PB&J, PB& fruit
grilled cheese; with or without ham/turkey
hot dogs
mac and cheese; plain, with hot dogs or with leftover taco meat
salads; cobb salads are great
chicken nuggets or fish sticks
hot pockets
homemade pizzas on bagels or english muffins
leftovers

My kids like to make pigs in a blanket, too, with cheap biscuit dough and cut up hotdogs. I allow them to make them all by themselves..which usually means they EAT them, too! LOL

We do a lot of roll ups..

Tortilla shells with sliced or left over meat, sliced or shredded cheese, relish (my 3 yr old loves pickles), you can microwave for 30 sec to warm them, melt the cheese.

We also do pb and honey.

As far as Kabobs go, we do chunks of meat, cheese, and veggies on them

We also do fruit kabobs. What ever we have on hand.

Well my kids are older and fairly social, so we're not always on a FIRM lunch schedule. My lunch menus tend to be fairly easy but still try to have them healthy. I'll have deli turkey ham and cheese for sandwiches. I'll keep a bowl of pasta salad which both my kids love. Have some yogurt, LOTS & LOTS of fresh fruit....they're huge fruit eaters. So we may have set meals, but sometimes they'll go and find something themselves. I just have a "NOT ALL JUNK FOOD DIET" rule. So they know if I can them with junk food, I'm gonna direct them toward an apple or strawberries. But it works for us. I was probably more structured when my children were smaller and couldn't make their own meals.

How do you make them with cut up hot dogs? My ds loves to make them the traditional way.

I don't know how Jen makes them, but here we use crescent rolls and hot dogs....if you have smaller hotdogs (like cut in half) then we'd cut the crescent roll in half, too. HTH!

my girls love my cold pasta salad. Mix cooked (chilled) noodles (of your choice), chopped or shredded carrots, and what ever raw vegg your kids like (olives, celery, green peppers, what ever), small cubes of cheese and what ever cold meat you desire (left over chopped up chicken, ham, turkey works well) then, toss lightly with olive oil or even some italian dressing! It's very easy and refreshing durring summer...
