I make so many things with cream cheese.
Cheese Cake
1/3 cup granulated sugar
1- 8 oz. cream cheese
1- 8 oz. cool whip
1 graham crakcer crust
Mix sugar and cream cheese with electric mixer. fold in cool whip.
Add to graham cracker crust. chill in fridge for a few hours.
You now have a simple and yummy dessert. (You can also use the low fat or fat free cream cheese and coolwhip and the reduced fat crust)
Pizza dip
1 - 8 oz. brick cream cheese
1/2 cup sour cream
1 jar pizza sauce
cut up pepperoni
1 bag mozzarella cheese
Italian seasoning
beat together sour cream and cream cheese. Sprinkle in italian seasoning and mix.
Spread mixture into a pie plate. Top with cut up pepperoni and jar of sauce. bake in oven at 350 degrees for 15 minutes or until bubbly. Remove from oven and sprinkle with mozza cheese over the top. Return to oven and bake 5 -10 minutes more or until cheese is melted. Serve with crackers, tortilla chips or bread cubes

1 block cream cheese
4-6 oz sour cream
1 can of clams, drained
Blend all, serve with chips or veggies
You can also use a package of onion soup mix instead of the clams.

CHEESECAKE!!! Look under the desserts forum I posted a recipe for a baked cheesecake. It is delish. Let's see what else?????
Appetizer:
Take a dinner size plate/platter, take softened cream cheese and spread onto plate. Than take cocktail sauce and spread on top of cream cheese. Than get some cooked, peeled shirmp and put them nicely on top of cocktail sauce. Refridgerate if you are not going to eat it right away.
If I have left over cream cheese, I will use it when I make mashed potatoes.
that's all I can come up with right now.

I don't know if I've posted the recipe yet, but I have one for Pineapple Pretzel salad that is awesome (cream cheese, cool whip, crushed PA, and candied pretzels)
Crockpot cream cheese chicken
Garlic Beef Stroganoff
There's all kinds of dips....I really like shrimp dip....spread a block on a platter, spread a layer of cocktail sauce over it, then tiny shrimps, flaked crab meat if you want to, and some parmesan cheese and eat with crackers. YUM!
I know I have more ideas, but it's too late for my brain to function well.

I always keep at least 3 lbs on hand at all times. My DH's favorite cake is carrot cake with cream cheese icing. I also love to make Gooey Butter Cakes in various incarnations, my favorite being pumpkin ( I believe I posted the recipe in a Paula Deen thread) which calls for a brick. I also make a cream cheese pound cake (DH's other favorite):
1 8oz brick cream cheese, softened
2 sticks butter, softened
3 cups sugar
6 eggs at room temp
2 tsp vanilla
dash salt
3 cups ap flour
Grease and flour a 10 cup bunt pan. Cream butter & cream cheese together til light, add sugar and beat until very light & fluffy, about 10 min. Add eggs on at a time, beating well after each addition. add vanilla and salt, mix. Add flour in 3 additions just til blended. Fold batter a few times to make sure all flour is incorporated. Pour into prepared pan. Place into cold oven and turn temp to 200 for 20 min, increase heat to 250 for 20 min, increase heat to 275 for 10 min, then finally increase to 300 for 45 - 55 min, til a pick comes out clean. cool in pan for 10 min, then turn out to finish cooling. It cuts best when completely cool, but is heavenly warm It's very old fashioned to start in a cold oven, but is worth the babysitting. I love to serve with fresh strawberries and whipped cream.

I completely forgot my Classic Cheese Cake:
1 cup graham cracker crumbs (I prefer the cinnamon)
2 tbsp sugar
4 tbsp butter, melted
Preheat oven to 425. Combine all ingredients and pat into the bottom of a 9" springform pan. Bake for 10 min. remove from oven to cool while preparing filling.
4 8oz bricks cream cheese, room temp
3/4 cup sugar
1 tsp vanilla
2 eggs
1 cup sour cream, room temp
2 tbsp flour
Cream cheese and sugar till creamy. Add vanilla and eggs. Incorporate well, but do not beat long to avoid adding air. Beat in sour cream and flour just till incorporated. Pour into cooled crust. Place into 425 oven for 10 minutes, then cut temp back to 250 for about an hour, or till center is just set. Cool for an hour, run a thin knife around the edge of cake, then place in fridge for at least 4 hours, all day is best. This is a classic dense NY style and is very rich. Enjoy

I was going to suggest cream cheese brownies and a no bake cheesecake, but it looks like others beat me to the punch.
