This weeks food holiday is:

Candied Carrots:

1 lb baby carrots
1/4 c butter
1/3 c brown sugar

Cook carrots in a large pot of boiling water until tender. Drain off most of the liquid,
leaving just enough to cover bottom of the pan. Set the carrots aside.
Stir butterand brown sugar into the water. Simmer and stir until the butter melts.
Return carrots,toss to coat. Cover, and let sit for a few minutes and serve.


Corn and Zucchini Medley:

4 slices bacon
2 cs chopped zucchini
1 1/2 c fresh corn kernels
1 small onion, chopped
1 pinch pepper
1/4 c shredded Monterey Jack cheese

Cook Bacon over medium-high heat until evenly brown. Reserve 1 tablespoon of drippings.
Drain bacon, chop, and set aside.
Heat drippings in the skillet over medium heat and saute the zucchini, corn, and onion
til tender,10 minutes. Season with pepper.
Spoon vegetables into a bowl, and sprinkle with chopped bacon and cheese.


Garlic Green Beans:

1 Tbs butter
3 Tbs olive oil
1 med head garlic - peeled and sliced
2 (14.5oz)green beans, drained
salt and pepper to taste
1/4 c real grated Parmesan cheese

In a large skillet over medium heat, melt butter with olive oil; add garlic, and cook til
lightly browned, stirring frequently. Stir in green beans, and season with salt and pepper.
Cook until beans are tender, about 10 minutes. Remove from heat, and sprinkle with cheese.
