Tuna Sandwiches

1 can tuna, drained
1/2 cup mayo
3 hard boiled eggs, diced
1/2 T dried onion
1t celery seed

My dd puts relish on hers also..

i only make tuna casserole and tuna sandwiches. I would like some more ideas with what to do with canned tuna. I have about 8 cans in my pantry.

TUNA BURGERS

2 cans tuna in water, drained
2 eggs, beaten
1 carrot, scraped and finely grated
1/4 c seasoned bread crumbs
2 green onion, finely sliced
2 Tbs chopped flat parsley
1 pinch cayenne pepper
another 1/4 c bread crumbs for dredging
4 tsp olive oil
4 hamburger buns

Mix tuna, eggs, carrot, breadcrumbs, onion, parsley and cayenne; shape mixture into patties. (then dredge in last 1/4 c crumbs)

In a large skillet, heat olive oil over medium heat.

Saute tuna patties for four to five minutes on each side(turn carefully sometimes they'll fall apart a little)

Serve like a burger...lettuce,mayo etc........




TUNA CRACKER SPREAD

1 (8oz)cream cheese ,softened
1 can tuna ,drained
3-4 Tbs mayo
1/2-1 Tbs lemon juice
3/4 tsp curry
1 dash salt
2 green onions, finely sliced

Mix all and chill an hour or so and serve w/crackers

I eat it probably four times a week. In salads and in sandwhiches, on melts, and in macaroni. I have waaaay too much mercury in my system.
