~~Bizarre American Holiday Foods~~6-18 through 6-24



This weeks holiday are:


Ice Cream Soda Day--June 20th
National Chocolate Eclair Day--June 22


And a reminder ~entire month~ of JUNE has been declared:

National Iced Tea Month
Turkey Lover's Month
National Fresh Fruit and Vegetables Month
National Papaya Month
National Dairy Month



Classic Rootbeer Floats...

1/2 pint vanilla ice cream
1 (12oz)bottle root beer (or cream soda)
whipped cream
maraschino cherries

Place 1 scoop of ice cream into each of two tall glasses.
Pour root beer over the ice cream. Add another scoop and repeat.






Here's ~~MOMMY&WIFEISME~~'s recipe for Easy Eclair Cake...

Chocolate Eclair Cake

2 small packages of vanilla pudding
3 cups milk
1 (8 oz ) cool whip
1 package graham crackers

Make pudding with just 3 cups of milk. Mix cool whip with pudding.
Layer in a 9 X 13 inch pan as follows:
layer whole graham crackers


then 1/2 cool whip mixture
then graham crackers
then the other 1/2 of cool whip mixture
then top with layer of graham crackers
Frost with chocolate frosting
refridgerate!

Brown Cow:
Coke
1 Tbs chocolate syrup
Vanilla ice cream


Strawberry Soda Ice Cream Soda:

1/4 c strawberry syrup
A splash of milk
Seltzer
Vanilla (or strawberry) ice cream


Black and White Ice Cream Soda:

Chocolate syrup
Seltzer
Vanilla ice cream

(add instant coffee and make it a mocha ice cream soda )


Hoboken:

1/2 cup pineapple syrup
splash of milk
seltzer
chocolate ice cream

6 thick slices bacon, chopped
1/2 c red onions, minced
1 tsp minced garlic
1 lb fresh green beans, trimmed
1 c water (or even better beef broth)
1/8 tsp salt
1/8 tsp pepper
2 tsp karo syrup


Place bacon in a large, deep skillet. Cook til the fat starts to come out.

Stir in onions and garlic; let cook for 1 min.

Stir in beans,karo and water.

Let the beans cook until the water has evaporated and the beans are tender. If the beans are not tender once the water has evaporated, add a small amount more water and let them cook until tender. Season with salt and pepper .

When I can find good fresh beans...this is how I make them...constantly!:happy dance:

1 (15oz)light red kidney beans, drained and rinsed
1 c fresh corn kernels
1 small onion, diced
1 c cherry tomato halves
2 Tbs lime juice
1 tsp lemon zest (opt-but I like it)
1 Tbs olive oil (or more)
salt and pepper to taste
1/3 c thinly sliced fresh basil

Toss beans, corn, onion, tomatoes, lime juice, and lemon zest. Drizzle with olive oil, and season with salt and pepper. Mix in basil right before serving.

fresh basil...mmmmmmmmmm

I laugh while I type this...cause for some reason-I feel like it has "sarahbpatton" wrote all over it ..."foo foo california food"...hahahaaaa

BLT BITES

1 lb bacon, cooked and crumbled
1/2 c mayonnaise
1/4 c green onions, chopped
2 Tbs chopped fresh parsley
20- cherry tomatoes

cook and crumble bacon.

Stir together the mayonnaise, bacon, green onions, and parsley until well blended. Set aside.

Cut a small slice from the top of each tomato. Using a melon baller scoop out the inside of
each tomato and discard. Fill each tomato with the bacon mix, and refrigerate for 1 hour. Serve chilled.

You can also use 1/2 mayo 1/2 cream cheese(think garden veggie)

4 c chopped green tomatoes (I like to skin them also)
1 Tbs salt
1/2 c butter
2 c sugar
2 eggs
2 c flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp baking soda
1/4 tsp salt
1/2 c raisins
1/2 c chopped walnuts

Place chopped tomatoes in a bowl and sprinkle with 1 tablespoon salt. Let stand 10 minutes. Place in a colander, rinse with cold water and drain well.

Preheat oven to 350
Grease and flour a 9x13 inch baking pan.

Cream butter and sugar. Add eggs and beat til creamy.

Sift together flour, cinnamon, nutmeg, soda and 1/4 teaspoon salt. Add raisins and nuts to dry mixture; add dry ingredients to creamed mixture. Dough will be very stiff. Mix well.

Add drained tomatoes and mix well.

Pour into the prepared 9 x 13 inch pan. Bake for 40 to 45 min,til toothpick inserted into cake comes out clean.

Since its dairy month.....heres a quick simple sour cream biscuit recipe

1 c biscuick
1/2 c sour cream
1/4 c butter or margarine, melted

Mix all. Drop by rounded Tbs into greased miniature muffin pans.

Bake at 425 15-18 minutes(golden brown)

Oh this sounds good!I will be making this soon!I am looking through all the recipes here on the board for a dinner idea with what I have.I did not make a menu this week.I think this is the first time in years! I am doing so much painting this week and getting the house in order.Cleaning carpets and so on that I don't know what I will feel like each day if I want to cook or not.......Kinda weird wondering what are we having for dinner and trying to think of things each day.I know I will not do this again!Even if I have to plan sandwiches each day......

4 c fresh strawberries, halved
2 c fresh blueberries
2 kiwifruit, peeled and sliced
2 bananas, sliced
2 c seedless red grapes, halved
1 (8oz)vanilla yogurt
2 tsp lemon juice
1 tsp sugar
1/2 tsp vanilla


Mix all the fruit.

Combine yogurt, lemon juice, sugar and vanilla; mix well. Serve over fruit!!!

So simple yet soo good!!!!!!
