I was going to suggest zucchini & carrot waffles! The pumpkin ones sound yummy, I want to know how these turn out!

I went and bought the waffle maker and some batter so I'm going to try the carrots first! Wish me luck! Oh I would love that pumpkin recipe too!

What about mixing in a jar of baby food??? Than you could mix it up and he wouldnt see anything in his waffles. You could mix veggies and fruit. Let us know. I think there is nothing wrong with sneaking in fruit/veggies into food.
