We are going to a family reunion next weekend. It is an 8hr drive away, and I haven't attended in 13 yr.
Well, here is the dilemna. I need some ideas of what I can cook to take. I will be staying at my grandparents so I will have accesss to the kitchen, but I am sure it will be a busy place.
I was thinking I could make crab dip and freeze it before we go and pack it ina cooler and just pop it in the oven the day of. I don't know. I am sure there will be dozens of salads and such.

How about tator tot casserole. You could bake it ahead of time in 8x8 pans or assemble it and freeze it and bake it there.

Take a big watermelon to cube up when you get there.

I'm gonna have to brain storm this dilemma a bit.....

but a few off the top of my head are...bake a cake and frost it there.(that saves on everyone standing in line to use the stove and oven)a million dollar cake is a great summer cake idea...

another idea for kids...that could travel ready to go...is make the lollipop cookies...drizzle melted choc/vanilla fosting or reg choc chips and sprinkle with red white and blue sprinkle.(you can toss em in the freezer)

do you have something in mind you wanna take???
like do you prefer a hot dish???

make appetizer wraps...those would travel ok in a cooler.

No I really don't have a preference. I am just trying to think ahead. I can just sit here and imagine myself in the kitchen trying to prepare something while chasing my baby around the not so child friendly home. I was trying to think of something that was easy, that may not be a duplicate dish, that doesn't have to be HOT, since it is held outdoors, and my southern family will love. Asking alot aren't ?

the wraps might be a good way to go...they will travel great and you could do them any of 100 diff ways.(reg sandwich or even fruit ones.)

You could also knock em dead w/the fruit salsa and cinn chips!!!People tend to LOVE that.

Beer Bread with dip

You can bake the bread at home and pack the mayo and sour cream in your cooler and mix when you need it.. Add garlic or dried herbs. Bacon bits are also good.

Here is one recipe that I like to make in the summer time-but I have never made it & traveled a long distance with it. It is called:

Texas Caviar
*1 can corn(drained)
*1 can diced tomatoes
*2 cans Blackeyed peas(drain & wash peas)
*1 med onion diced
*1-can Rotel(drain & save some of juice)
1-Large jar thick & chunky picante sauce-I use Pace
*Juice of 4 limes

*Mix the lime juice & onion & set aside until all other ingredients are mixed.
*You can add more limejuice to taste.
*Tastes best after refrigerated overnight. Serve with corn chips.

brownis are another dessert that travel well and you wouldn't have to frost.Or you could do Staceys Pepperoni Pasta Salad(good cause it has no mayo )
asian coleslaw is another killer one that isnt mayo based so would travel well.
