Okay...we're all complaining....when it's this hot noone wants to deal w/anything throwing off any real heat......

so let's see what ya got for cold food ideas and microwave recipes or tips......

.....I have already listed some of my favorite microwave recipes.....and their are a ton of great cold pasta salads listed.

For some reason when it is hot, my family loves tomatoes on everything. So I will be headed for the market today. We only like fresh tomatoes. The grocery store's just don't cut it!
We like;
BLT's with cheese
tuna sandwiches with lettuce & tomato
scrambles eggs with cheese and diced tomatoes
shrimp pasta with diced tomatoes
fried tomatoes with melted cheese on top
turkey clubs with pesto
a big salad with sauteed shrimp or chicken

I like to do a big mess of stuff on the grill also if I know a hot spell is coming...then you dont have to even stand out at the grill for 2-3 days in the heat either.

Luckily my whole family,incl dd ,loves salads...so I usually do some tomato and basil chicken,asian chicken(w/asian dressing and green onions... oohh TDF)

My kids also even like grilled hotdogs reheated in the microwave..so I can do that w/a cold pasta salad and their good!!

Well, we tend to do a lot with fresh veggies. I will cook some chicken breast and chop it up for pasta salad that I add veggies too so that it's a complete meal. We do a lot with tomatoes as well, I love stuffing tomatoes with tuna salad or chicken salad, it makes a great main course on hot days. To be honest, I don't do much microwave cooking. I warm up a few things and I defrost in it quite a bit, but cook in it very little. So I'm curious as to what microwave recipes come of this thread.
