Default No Name Peanut Butter

In the Angel Food package for this month I got a jar of no name peanut butter - I don't use anything but Jif for sandwiches so I am looking for some recipes to use this in. I found the Peanut Butter cookie recipe posted - anyone else have any other suggestions?

My DD doesn't care about the brand of peanut butter so I have her eat the Angel Food stuff first while keeping a jar of Jif on hand for us... peanut butter is peanut butter to her.


Haystack Cookies

1 cup butterscotch chips
1/2 cup peanut butter
1/2 cup salted peanuts
2 cups chow mein noodles

Melt butterscotch chips and peanut butter on top of a double boiler, or in a microwave. Blend together.

Stir peanuts and noodles gently into the melted peanut butter mixture.

Drop dough by forkfuls onto waxed paper. Cool until set.

Peanut Butter Crispies - No-bake peanut butter bars

1 cup honey
1 cup white sugar
1/2 teaspoon salt
3/4 (12 ounce) package cornflakes cereal
2 cups creamy peanut butter

Mix honey, sugar and salt in sauce pan over medium heat and bring to boil.

Add 2 cups peanut butter and stir until dissolved. Remove from heat.

Add corn flakes and mix well. Spread in 9x13 inch pan while warm. Let cool then cut in squares.

Easy Peanut Butter Fudge

1 pound confectioners' sugar
1/2 cup peanut butter
1/2 cup unsweetened cocoa powder
6 tablespoons milk
2 teaspoons vanilla extract

Line a 8x8 inch square pan with wax paper.

Combine the confectioners' sugar, peanut butter, cocoa, milk and vanilla together and mix until smooth. Chill until firm then cut into squares.

peanut butter cup cookies.....use peanut butter cookie mix...roll into a also quater size ball..press down and up the sides of a mini muffin pan bake at 350 for 10 minutes and pop a mini peanut butter cup into each one...let them cool and mmmm they are so good.

Peanut Treats

3 cups salted or dry roasted peanuts
3 tablespoons butter
2 cups peanut butter chips
1 (14 ounce) can sweetened condensed milk
2 cups miniature marshmallows

Place 1 1/2 cups of the peanuts in an ungreased 7x11 inch baking pan; set aside.

In a saucepan, melt butter and peanut butter chips over low heat. Add sweetened condensed milk and marshmallows.

Cook and stir until melted. Pour over peanuts and sprinkle remaining peanuts on top. Cover and refrigerate; cut into bars when set.

I got a jar of no name peanut butter thru SHARE Colorado and was a little leary of using it. I just made a batch of monster cookies with it. they turned out great. see if you can find a recipe that calls for the whole jar, that way you use it up in one baking/cooking session. Let us know what you end up making and how they turned out!

here are some that are favorites in our house...

Peanut Butter Fingers (from PeanutButterLovers.com)
(National Peanut Festival Cookie and Overall Student Winner)
1 loaf white bread
1/2 cup chopped roasted peanuts
1 12-oz. jar creamy peanut butter
1/2 cup oil
1 package chocolate candy coating

Freeze loaf of bread overnight. Remove crusts and save. Cut each slice of bread into four or five finger size pieces. Place fingers and crusts on a cookie sheet and bake at 225°F for 30 minutes. Crush crust to make crumbs (a food processor is helpful). Mix bread crumbs and chopped peanuts in a paper or plastic storage bag.

Mix oil and peanut butter. Microwave on high for 3 minutes and stir until smooth. Dip fingers in peanut butter mixture and them put in the bag of crumbs. Shake to coat. Place fingers on cookie sheet and bake in a 350°F oven for 10 minutes.

Melt candy coating following package directions. Dip fingers and place on waxed paper. Sprinkle with remaining crumb mixture. Store in airtight container up to 2 weeks.


Peanut Clusters

12 oz Choc. Chips
12 oz Butterscotch Chips
1/2 C peanut butter
1 LB cocktail peanuts

Microwave choc & butterscotch chips along with peanut butter in bowl until smooth when stirred (varies per microwave usually approx 3 min). Stir in peanuts. Drop into mini-cupcake papers and refrigerate until hardened.


Peanut Butter Playdough (from PeanutButterLovers.com)

Dry Milk Powder
1 cup Peanut Butter
1 Tbsp Honey or 2 tbsp corn syrup

Mix honey and peanut butter. Mix enough dry milk powder fo form stiff pliable dough.
