I need a fast and easy meal to make for supper tomorrow night something that only takes 30-45 minutes.... Oh, and it has to be something light...


Out of all my recipes, my mind is blank!


Does anyone have any suggestions??

Something light?? What do you mean, low fat???

You could always do some kind of salad...

Or I always do lasagna it takes that long to put it together, but then it sits in the oven and you take it out all ready to put on the table....

tuna,egg or chicken salad on bread.Veggie cut up with dip or green salad to go with it.

Sorry forgot to say no salads.. I've been making salads for a few weeks now and wanted something different..

By light, I meant not heavy,

I might try cream cheese chicken in the crockpot and then just make rice right before..

I'll take other suggestions though.. something that would knock someone's socks off!

I had the chicken ceasar salad recipe with romaine and pasta last week, and it was a big (and surprising) hit (thanks mom2mercedes!!). Good, quick and healthy, plus cool for the summer months, what else could you ask for? Check out the recipe here in Sides & Salads...

Default 10 Min Chicken

10 min chicken

RECIPE INGREDIENTS:
2 pounds skinless and boneless chicken breasts
4 tablespoons olive oil
2 cloves garlic, minced
1 cup chopped parsley
1 cup sliced scallions, whites only
2 tablespoons lemon juice
2 tablespoons balsamic vinegar
salt and pepper
1. Cut the chicken into bite-sized pieces while you heat the oil in a frypan. Put in the chicken and toss the pieces briskly over high heat. Keeping the flame high, push the chicken to one side of the pan and add the garlic, parsley and scallions. Toss 1 minute more, add the lemon, vinegar, salt and lots of black pepper. The chicken will be cooked through in 1 or 2 minutes. Makes 6 servings.

I am making this tomorrow and serving it with rice and green beans for a veggie.

Man this sounds really good, only problem is I don't have any chicken thawed out today.. I will keep this recipe though and make it next week..
