We are having a new recipe I found on the Taste Of Home website. Chicken stuffed with asparagus, sundried tomatoes and fontina cheese, I'll make a side of rice to go with it.

We are having roast pork loin stuffed with mushrooms and shallots, roasted potatoes and a green salad. I would like to think I'll have time to make rolls, but if not we'll just do with out and there's pound cake for desert.

We're having salmon stuffed with spinach, pesto and pine nuts; oven-roasted cauliflower and a green salad. I'm thinking of making a splenda cheesecake topped with fruit for dessert if I can find a good recipe.

It's cold today (thank heavens) and I think I'm going to catch up on some baking / cooking. I haven't made homemade pasta for some time! And as I have a bunch of roma tomatoes in the garden I'll probably combine those in as well.
