Scratch Chin peeling boiled eggs

Is there a trick to this? Sometimes the shell comes straight off and sometimes it is harder than heck to get it off. I have noticed that organic and cage free eggs have a harder lining under the shell.... anyone else notice this?

So, what can I do to make perfectly peeled deviled eggs??? There must be a simple trick...

I dip my hard boiled eggs into icy water as soon as I take them off the stove. That helps some I think.

Adding a half teaspoon of salt to the water before boiling the eggs is thought to help both with the preventing of cracking and making the eggs easier to peel. Put the burner on high and bring the eggs to a boil.
After eggs are done, remove the pan from the heat- put eggs directly into cold/ice water. Then, peel.

A touch of vinegar in the boiling water helps the peels come off.

I always put mine in ice water at the end also I peel mine with a spoon I put it between the shell and the egg and then go around the egg and most of the shell falls right off. HTH

Older eggs are easier to peel...so if you have some that are brand new and some that are a week old, use the week old ones.

I simmer for about 12 minutes and then pour ice water over them and then peel them soon after and they peel no problem...no need to vinegar, salt etc

Not overcooking and using the ice water helps prevent the green ring around the yolk as well.

Yep, fresh eggs are the problem. They are harder than hell to peel nicely. Use eggs that are at least a week old. I still use a bit of vinegar. Also, the ice water bath is very important as it stops the eggs from cooking. If you don't you'll have overcooked green eggs. The way I peel them is give it a good whack on the counter (the side of the egg), roll it with my palm, then I can pull both ends off like caps. Good luck! Eggs can be really frustrating sometimes.
