It's one of those things I can laugh about now, but last night after my two hours of being super cooking mom, I wanted to cry. But like I said...no offense meant...the meatloaf was good. I'm just a lousy cook!! See this is why I always ask you to adopt me!!! But I'm not giving up...no way!! Supermom will be back with another attempt at a recipe!

I just bumped a recipe for SUPER EASY LASAGNA. The only chopping is a little onion.

I love the idea of testing out new recipes....we have something new at least 3 nights a week. Sometimes they are just me throwing things together, sometimes they are actual recipes. I'm with ya, Aliadam, what's the plan for tonight??

I made the Tater Tot Casserole and I loved it, the kids picked at it and DH ate it, but wasn't crazy about it. It figures I find something new, I like it and no one else does! All right, next week after the inlaws leave I'll try something else.

I made a recipe posted by Lainey last night and it was so good!My DH loved it.Instead of the sour cream ranch dip I used homemade ranch and it worked perfect!Thanks for sharing this recipe!

Here it is-

Buffalo Chicken Enchiladas W/ranch

--------------------------------------------------------------------------------

1 {10 3/4 Oz.} Can Condensed Cream Of Chicken Soup
1 Cup Sour Cream Ranch Dip
2/3 Cup Green Onions
3 Cups Chopped Roasted Deli Chicken
3/4 Cup Purchased Buffalo Wing Sauce
12 {6 Inch} Flour Tortillas
3 Cups Shredded Cheddar Cheese

Heat Oven To 350 Degrees. Spray A 13x9 Inch Glass Baking Dish With Cooking Spray. In Medium Bowl, Mix Soup, Dip And 1/3 Cup Of The Onions. In Large Bowl, Mix Chicken And Buffalo Wing Sauce Until Coated. Spoon 2 Tbs. Soup Mixture Down Center Of Each Tortilla; Set Remaining Mixture Aside. Reserve 1/2 Cup Cheese For Garnish. Top Each Tortilla With About 1/4 Cup Chicken Mixture And Scant 1/4 Cup Cheese. Fold Sides Of Tortillas Over Filling; Place Seam Side Down In Baking Dish. Spoon Remaining Soup Mixture Over Filled Tortillas. Cover Tightly With Foil. Bake 40-45 Minutes Or Until Hot And Bubbly. Remove From Oven. Uncover; Sprinkle With Reserved 1/2 Cup Cheese And Remaining 1/2 Cup Onions. Return To Oven; Bake Uncovered About 5 Minutes Longer Or Until Cheese Is Melted.
