I made the enchilda casserole (thanks to mommy2mercedes). It was very good. I recommended it. It will be a favorite in my household now.

Put chicken, carrots and potatoes in slow cooker.
Mix rest of ingr and pour over chicken.
Cover and cook on high about 5 hours or on low for about 9 hours,til chicken leg and thigh come off easily when pulled. :happy dance:

We thought the same thing here. Super moist and delicious. I was always afraid of whole chickens until now. Thanks M2M.

Applesauce pancakes-recipe from M2M

Great! Even my pickey 23 month old liked them. Very easy. This one is another keeper. Made about a dozen plus what the kida ate at breakfast, so now we have some in the freezer for later.

Update: 01/04/08. Made these again. I actually got 24 3" pancakes this time. Perfect size for little eaters. Just want to say again that these are really yummy.

Swiss Chicken Casserole-Lainey

Made this for dinner tonight. Turned out good. I think I should have used a family size can of Cream of Chicken soup but all I had was a smaller can. Liked it a lot.

My latest new try was the scalloped potatoes n beef thats posted....OMG was it GREAT and everyone oved it!!

I'll definately be making that again!

I had Lainey's chicken tortilla soup for Christmas and it was fabulous. Everybody loved it.

We absolutley love this too, but I used flour tortillas because that's what I had on hand. YUM-O!

thanks go out to ryansmom10 from our house this week for the fish stick idea I found of hers in the weekly ingred...

I did the fish in a blanket one for dd and she absolutely loved it !!!!she dipped hers in homemade tartar sauce though.

We do homeschool so I am always looking for new lunch break ideas and this was a BIG hit.
