I came across it in a recipe. What is it exactly though? Definitely doesn't sound healthy.

I think (and correct me if I'm wrong) you can subsitute salt pork if you can't find fatback.

Alot of people use it to season green beans and pintos. Some people use side meat. It has more lean and less fat. Fat Back is mostly just fat. Both fat back and side meat you can buy at the grocery store.

It is similar to bacon, ALOT more fat and flavor. It is great for seasoning like you would with bacon in green beans, and to fry in it's grease. Yes not a healthy thing by any means.

Yuck....I just got the creepy crawlies up my spine..lol

My dad loves this stuff and made us eat it every
New Years Day with blackeyed peas to bring us luck
all year. Definitely heart attack food!!
