Oh I wish I could! You would not even believe how many we have. Our garden is 60' long. There is a complete row of 3 different kinds of hot peppers and a complete row of 3 different kinds of sweet peppers.

I'm canning salsa tomorrow (overloaded w/ tomatoes too) and a huge pot of chili. I might freeze some of that too.

I love roasted bell pepper and onion with fajita seasoning just plain. Just roast them either in the oven or a skillet and throw the seasoning on it and they are delicious. You can also stuff pita's or tortillas with them or throw them in with rice or pasta.

I also make a great pasta dish with them. Fry them in a skillet (you could add onion, I'm sure but I've never tried it) with garlic, then add to pasta (angel hair is good) and toss with EEOO. The garlic and peppers work well together!
