My garden is exploding with green sweet peppers. My dh doesn't like them w/ sauce. I stuffed some yesterday. What else can I do with all of these. I really need some ideas!

My hubby loves it when I fry them along with onions and put them on his steaks, salads, hamburgers, meat loaf, pork chops, and stuff like that. You can also chop them really small and put them in a casserole or hot dish.

When I find some on sale, I'll cut them up in different sizes (chopped, strips, etc.) or leave them whole for stuffed peppers, and freeze them for later. They freeze well, as long as you plan to put them into something that is COOKED, like a casserole or for making stuffed peppers. They don't thaw out well for adding them to say, salads, etc. because the fleshy part kind of looks "clear" when thawed out. If you KWIM.

I eat them raw with salsa, on salads, I stir fry them with other vegetables and chicken (I know you are a vegetarian so you can leave out the chicken). I also stir fry them with fish and serve over rice. But, my absolute favorite would be:

FAJITAS!!! You can make vegetarian fajitas with peppers, onioins, even mushroom and black olives. We love fajitas in our house!

How about Macaroni salad? I make a dish with pasta onions and green peppers with no sauce. kabobs? umm.. Well thats all I can think of off the top of my head right now.
