??? Leftover butt roast question ???

We did a butt roast in the crock pot about a week ago, it was approx 5 lbs so needless to say we had a ton left over. I put it in the freezer to do something with it later. I took it out today and I am thinking to just do a stroganoff.....anyone have a good recipe??

I don't think I have enough time to throw it back in the crock put though...since it is now 2:40....so anything other than that would be greatly appreciated!!

Ok so this is what I did, and I will have to post a new thread too...

I put the "meat" in a big frying pan....

threw in two cans of broccoli cheese soup
about 6 oz. of sour cream
a little bit of milk
some chopped up onion and yellow pepper

and just let it simmer for about an hour!!

Then we put it over some egg noodles. It was a big hit!! They all loved it!!

Bucsnpats......perfect....you can also use cream of mushroom to make more authentic stroganoff....but I love cr of broccoli too....yum
