Sure! It's super easy...it's a family favorite at our house, all year round.
POTATOES
3lbs Sweet Potatoes
2 Lg Eggs (slightly beaten)
1/4 C Brown Sugar (firmly packed)
3 T Butter (melted and cooled)
1 tsp Salt
1 tsp Ground Cinnamon
TOPPING
1/2 C Brown Sugar (firmly packed)
2 T Butter (cold, cut into small pieces)
1 C Pecans (coarsely chopped)
Preheat oven to 375.
Peel the potatoes and cut them into same size pieces. In a large pot, bring the potatoes and enough water to cover them well to boil. Reduce the heat and simmer until they're done (knife inserted comes out easily). Drain them and leave them to cool for a bit.
When the potatoes have cooled a bit, put them thru a ricer into a large mixing bowl. Beat the potatoes for a minute or two, until smooth. Add the other ingredients, in order and beat until incorporated.
Scrape mixture into a casserole dish and smooth the surface. Combine the pecans with the brown sugar (topping recipe) and sprinkle evenly over the top. Dot the top with the small butter pieces.
Bake for 25-35 minutes or until bubbly.
