Can you use whole wheat flour exactly as you would use regular white flour, in anything, cup-for-cup? Does it make everything better, in your opinion, or should I keep both on hand because there are uses for each? I hardly ever bake, but as I'm doing more and more from scratch, I want to make things as healthy as possible... and I see a lot of bad talk about white flour!

I use straight whole wheat flour in a lot of my cooking because that was the way I was raised. The taste/texture difference does not bother me at all...but it does bother some people - especially those who aren't used to it. Some people suggest using half whole wheat and half white flour in baked goods which I do sometimes so I do still have white flour on hand.

I bought a 5 lb bag of whole wheat flour a few months ago for a recipe for Oatmeal pancakes. Just a couple of weeks ago, I was wondering what to do to use up some more of the whole wheat flour. So I too posted a thread about how I could use it. You can use it just like you would your regular flour. I was still a little scared, so I made some banana bread and did 1/2 whole wheat flour and 1/2 regular flour. No one could tell the difference, even I couldnt. I think I will continue to try it out on other recipes. I may still only do 1/2 & 1/2, until I get brave enough to go all whole wheat flour. Good luck. Let us know what you make with it and how it turns out.
