One last Canning Question

I am maiking my final batch of Salsa in the next couple of days. The recipe I have makes 5 pints of Salsa.

My dilema is that I only have quart jars left. Even WalMart is out of pint jars. I don't really want to make QUARTS of salsa - we just can't eat that much after they are opened. Can I make the pint amount in the quart jars?? or will the extra air cause the salsa to spoil faster?? I will do a water bath for them ~

any ideas??

I am not sure and I have been searching on the internet to help you.I would say no.I do can but I have never ran into that problem.I would say there would be to much air and it might spoil it???

How about making it in the quarts and then think of things when planning your menu to use it up if you need to?I know it will keep a few weeks in the fridge fine.You could have it on omellettes,taco's,enchilada's,nacho's,over scrambled eggs,over chicken breasts and bake it,taco salad and one of my favorite is mixed using same amounts half ranch and half salsa and have over a salad with beans and corn and cheese Mmm.Lots of ideas!

How about that?

Yeah - I think I will have to do that. Just make it in full quarts, and when we open it use it for LOTS!

I could also freeze it, but then I have to find room in the freezer.

Oh well there are worse things

I would freeze it

When canning you are supposed to stir the contents to chase out all the air bubbles. You are also instructed to fill the jars within a half inch from the top that is so most of the air is vacuumed out during the water bath and sealing process. I don't think it is safe to fill only half the jar.
