Are there any substitutions for eggs when You only have 2 and you need 3? Or can i make a cake with only 2 eggs?

Ok, this is out of a Vegan cookbook - I use it for when I run out of milk, eggs etc...

For one egg:

1/2 banana OR

1/4 cup tofu (through food processor) OR

3 Tbs applesauce

I have none of the above. Its a cake mix from a box. What would happen if i only used 2 eggs instead of 3?

If you ever encounter something like that again, just google "baking substitutions" and there are TONS of sites out there with info. Hope it worked out!
