Default Hard chicken and rice

Ok the basic chicken and rice casserole recipe............you have the rice mixed with the soup and the chicken goes on top, place in oven...........does it matter what kind of rice is used? I use instant brown rice or white rice. Do you have to use the not instant rice? When I make this dish the rice is kinda hard.

I use regular white rice, and have learned that the times it is hard or crunchy is because it needs more water/soup/whatever liquid you use. I'm not sure how it would work if you use instant rice, I've never thought to.

Yeah, you need to add a bit more liquid for the rice to absorb and cook it. =)

Try cooking the rice before you place it in the pan I do that before I make anything with rice in the oven and it is always moist. It just takes an extra few minutes.

I think this campbells recipe I have for cheesey chicken had more liquid in it then the other one I make. It didn't come out hard this time.
