i know there is a more politically correct name for these but we call em Funeral Potatoes... you know the ones at every event... its thawed hashbrowns with sour cream, chives, shredded cheese, salt, pepper, and then you bake it... these are sooooooooooo very good... i use them as a comfort food in the winter... haha...

I love baked potatoes with just butter...dh thinks I'm nuts not to add sour cream, but OH WELL! LOL!

I also like "Freddies Potatoes"....pretty sure I posted the recipe a while back. I'll check on that later.

My favorite way is baked in the crock pot! I wash and poke holes in a few and wrap in foil. Throw in the crock pot and let it sit on low all day.
When supper is ready so are the potatos! Super EASY!!

My favorite is Oven Roasted Potatoes:

3-4 medium white potatoes, such as Russet, washed and cubed with the hull left on
canola or olive oil
1 packet of DRIED italian, garlic or ranch salad dressing mix

After washing and cubing the potatoes, toss them with desired abount of oil and the dried salad dressing mix...I usually add a little salt and pepper as well. Lay the potatoes out on a NON stick sheet pan and roast at 375 for about 45 minutes or untill they are brown and cooked thru. Red potatoes also work well for this recipe.

I think we really have three favorites but this is the easiest and my personal favorite.

I love loaded yukon gold baked potatoes. I clean them, prick them all over and rub with a little olive oil. I put them in a baking pan and sprinkle the tops with kosher salt and fresh ground pepper. Then I bake at 350 for 1 hr- 1 1/2 depending on how big they are. At home we have them just with butter and sour cream but for company I also serve with bacon pieces and shredded cheese.

We also like party mashed potatoes and company hasbrowns.
