well we are having the last ditch indian summer here in my part of iowa so we are gonna fire up the grill and have burgers, potatoes halves green beans and those darn addictive no bake peanut butter cookie balls someone posted on here(sorry can't remeber who it was).

what are you all havin?

We are having steak, hot dogs (probably on the grill,if it is nice), baked potatoes and corn.

We are having super easy Skillet Chicken enchilladas tonight. It's soooo fast and creamy!
Here's how:
Cube and cook chicken in skillet (about 7 min)
Mix sauce in a bowl: 1 can ckn broth, 1/4 cup ranch dressing, 2 tblsp flour
Add sauce to skillet with a can of mexicorn (or regular corn)
Toss in tortilla wedges and bring to a boil. Reduce heat and simmer a few minutes.
Sprinkle with mex seasoned cheese and cover. Simmer a few minutes.
I serve it with salsa on top. YUMMY!

We are having pork strips with peanut butter sauce stir fry, it is a take on Thai food, new recipe

Well, again I forgot to get spaghetti noodles, so I don't know what I am going to do. I wanted to try out my capers in a homemade sauce. I need to get it figured out soon. I have a pasta machine, but I don't feel like pulling it out.

I put in a ham and made homemade scalloped potatoes and I'll make peas too...I made the scalloped potatoes with soy milk, so we'll see how they taste. I threw in the entire ham and poured pineapple juice over it. We'll have some yummy left overs!
