Do you have a hard time cooking when it's just you and the kids... It seems so easy when you have to plan for everyone.. But when it's just us I take the easy way out and make mac & cheese, hot dogs, chicken nuggets, fish stix.. Now I make a veggie too, add fruit but it's not a "normal dinner, meat, potatoes, veggie, bread"

My dh is a farmer and won't be home for dinner till harvest is over.. (Thanksgiving?)

Come on girls give me some good ideas so I don't feel like I'm cheating.. And so I will eat, because that's easy for me to skip too..

I have the same problem on some nights of the week. LAst night the kids and I had a frozen cheese pizza, and some apple wedges with low fat caramel dip. Tonight, I made chili in the slow cooker, and of course, neither of the kids want chili (since it's so hot, but I was craving it); they'd rather have bologna sandwiches, and some fresh fruit, and milk. I'll fix myself a grilled cheese sandwich to go with my chili, and I guess we'll just have leftovers this weekend.

Don't beat yourself up over not fixing what you'd consider a "real" meal, when your dh is in the fields. To me, as long as they have a somewhat decent meal, whether it's all homemade, or something quick from the freezer, who cares?!!? Ideas for you!??? For me, I usually fix myself some soup, and a salad, and have a slice of bread on the side. Sometimes, I'll have ramen noodles, or tuna and crackers.

Good luck...and I hope the others will have some good ideas for you (and me too)!!
