Default How soon will you start baking for the holidays?

Just a question for those of you who start baking early for the holidays. I just bought a deep freezer and am wondering if any of you guys start baking early and freeze those items?

I wish wish wish I had a deep freezer so much! Last year I did just that. I baked on weekends when I felt like it so that my cookies came out well. Then I froze them HOWEVER you have to make sure the cookies that you are freezing are good freezer cookies. KWIM? For instance, a soft cookie might get soggy and a cookie with a frosting might as well. Beware! However, make your sugar cookies, freeze them un frosted ad then take them out in a month to frost them. Anyway, jealous!

Most of my cookies will be done on "cookie" day with my sisters on December 14. I also bake after work and on weekends starting in December. However - not all cookies freeze well, and not all cookies freeze well for over a month. So, if I want to be able to serve cookies at New Years, I can't be baking certain ones too early in December or they won't taste great even if they have been frozen. Others freeze really well for quite a while.

My mom and I did our pies about 3 weekends ago. We did pumpkin, triple-berry and apple for Thanksgiving and we did blueberry, apple and cherry for Christmas. My mom always does Fudge the week before Thanksgiving (not really baking, but dessert) and the day after Thanksgiving we start our "holiday set up weekend" that's when we do all of our decorating and we start baking cookies, bars and holiday things.

i have a couple batches in the freezer as well plus all my butter baking chips almond bark are all in the freezer i have been buying a few items a week so i'm ready.
