Jaw Drop 30lbs of potatoes!! HELP!

while shopping yesterday I bought a 15lb bag of potatoes for $1.50!! I was so excited by this deal, i figured i'd make some casseroles, french fries, hashbowns, and twice baked potatoes , all to freeze.

but this morning, my MIL dropped by and said "look i bought you 15lb bag of potatoes!" evidently she found the same sale that i found!! i could't turn them away, for 1) she bought them specifically for us 2) free food is FREE FOOD!!! 3) i didn't want to hurt her feelings..

so now i have 30lbs of potatoes!! what else can I make? I was wondering if i baked them then sliced thinly or cubed then froze if they would turn out yucky.. does anyone know?
ANY suggestions are VERY welcome!!!! TIA!

You could make scalloped potatoes and green beans w/potatoes. Those are the only 2 I could think of at the moment!!

One year I had way too much mashed potatoes and my grandma wouldn't let me throw them away so I froze them. I seem to remember that they were fine when I defrosted them. Make and then individually freeze enough for several meals.

I would just keep them in a cool dark place. My parents grew enough potatoes for a family of 6 in their garden for all year. We put them in a bin in a room in our basement were there wasn't ever any light unless we went in there. I wouldn't worry about them going bad. Just think of it this way now you don't have to buy potatoes for a while.

You can freeze mashed potatoes I do it every year.

You could make potato soup and freeze that too.

My menu for the next couple of weeks would have to be alots of potatoes

My parent had a fruit cellar in the basement and we had homegrown potatoes all winter log. It has to be dark and cold and the should be put in some dirt/sand.

make and freeze some twice baked potatoes for quick side dishes.
