My suggestion is corn casserole. It's THE BEST, THE EASIEST and pretty cheap to boot! lol

basic recipe,, can multiply

1 box of jiffy corn bread mix
1 stick of butter
1 can of creamstyle corn
1 can of whole kernel corn
1 container of sour cream (16 oz)

Melt butter, mix all ingredients in large bowl. Bake at 350 for approximately an hour

*large variance on the time and temp can work... just cook it until it isn't soupy, toothpick should come out without 'wet' on it*

This is good as a hot side, good as a cold breakfast, or dessert! lol

Green Rice
(broccoli cheese rice)
also can be muliplied

2 cups dry rice, cook it
1 large bag frozen chopped broccoli
1 large jar cheez whiz
1 small white onion
some salt and pepper, to taste really.
I cook the onion with the rice until rice is done. Defrost the broccoli, and once the rice is done, just mix all ingredients together and bake for about 30 minutes at around 350 or so. That's my dish that I always bring to all holidays, I got dibs...lol. Super easy and fairly cheap!

Will you be able to cook it in the oven when you get to the party or does it need to be something that does not require cooking?? Do you have a large crock pot? That may be an idea, that way you do not have to wait for the oven to be available.
What about a veggie tray or cheese and cracker trays???

Chopey-love the rice recipe. It sounds so good.

I've never made this but I plan on trying it this year. My aunt made a similar dish last thanksgiving and didn't have any ritz crackers for the topping. All she had in the house was the goldfish she keeps for my kids, so that's what she used. It was delicious!

Broccoli and Cauliflower Casserole

INGREDIENTS
1/2 cup uncooked white rice
10 ounces broccoli florets
10 ounces cauliflower florets
1/2 cup butter
1 onion, chopped
1 pound processed cheese food, cubed
1 (10.75 ounce) can condensed cream of chicken soup
5 3/8 fluid ounces milk
1 1/2 cups crushed buttery round crackers

DIRECTIONS
In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Drain and set aside.
Simmer broccoli and cauliflower florets in water for 10 minutes, or until crunchy. Meanwhile, preheat oven to 350 degrees F
In a large saucepan, melt butter and saute onion. Stir cauliflower, broccoli and rice into the saucepan. Once the vegetables and rice are coated, stir in the cheese, chicken soup and milk. Transfer the entire mixture to a 9x13 inch baking dish and sprinkle the crackers on top.
Bake in a preheated oven for 30 minutes.
