Ok, if anyone knows me, I am not a great Cook at all.

I can follow a recipe and it comes out ok, but it is usually very stressful for me...and it has to be an easy recipe!!

Well, I recently went to a cooking class (something about seeing it first hand for me I guess, I am loving classes of all sorts lately).

In any event, we learned Pasta E Fagioli (sp?), Eggplant Parm, breadsticks, and a salad dressing.

Today, because we have all been pretty sick, I tackled the soup and the breadsticks, two recipes from SCRATCH!!!

And I actually had fun, and did not stress, and they both turned out great!!

DH even commented on how well the kitchen smelled while I was cooking!!

I gotta tell you though, chopping up onions, not only made me cry, it actually hurt my eyes!! That was the worst part!

Black and Decker makes a handy little electric chopper, I bought one at the evil Walmart for $10 - it is great for chopping onions and nuts.

Hooray for you!!
I was an awful cook and I hated doing it - but once I put my mind to it I learned how to make a few things, and made a few things well I gained confidence. Now I love to cook!

WooT ~ dinner at Stacey's!!

I LOVE to cook from scratch when I have the time (and the kids aren't running through ). To spend the entire day in the kitchen, with some friends, some good drinks, good music and good food! Could there be anything better??

I am glad it turned out ~ you will need to share the recipe

My dad has only given me 2 useful bits of advice in my life - one of them is "if you can read, you can cook!" I've found it to be true. Start w/ the simple stuff - congrats!

Congrats!!!
I used to hate cooking then I realized that at my house if I did not cook, we did not eat. So, since I had to cook I might as well enjoy it. I bought a bunch of cookbooks and just started new recipes. Not all of them are good, but we have found many things we like. Now DH's whole family thinks I am the best cook ever. Even better than Grandma!
Just keep at it and you will become an awesome cook too. If you think you can do it, then you can. It is all about the "power of positive thinking!"
