I don't have many ideas cause I'm dealing with the same thing, picky eaters. For boys school, they typically get a pb&j sandwich or easy mac n cheese. When home it is either of these 2 I just mentioned or grilled cheese, hot dog, pizza. Gets kind of boring!!!
What about some peanut butter on a apple? Cheese stick? Yogurt or drinkable yogurt? Just a few things that jumped out to me.

I was talking about packing. I looked and I guess I forgot to mention that! LOL! I can't give him an apple because it will get brown (that is gross though) and my son doesn't do peanut butter. The easy things he doesn't like!

You could just put a whole apple in there.

They had clementines on sale this week and we picked some up to try. The kids wouldn't eat them last year. Well, this year they do. So I peeled one and put it in his snack for today.

My kids are picky too. Right now they are on a butter noodle kick.I have discovered ds will eat sandwiches if he makes them himself. So I roll up some lunch meat, cut it in half, cut some cheese in triangles or squares and cut up some bread or tortilla, or put some crackers in there. (homemade lunchables) If you can use thermoses you can pack leftovers.

Boiled eggs
sandwich wraps
raisins
yogurt
pretzels

You could definately try a whole apple, or if you need to slice it, just dip the slices in 7-Up or Sprite (or some kind of lemon/lime soda). It keeps them from turning brown. When my kids were small, they wanted the apple sliced up, and didn't like the sharpness of lemon juice to keep the flesh white. A friend of mine told me about the 7-Up and it worked great for me. I also wrap it up really well in a baggie, squeezing as much air out as possible.

My kids don't like any kind of sandwiches...except for peanut butter varieties. So that's what they get. I do vary other items though, they like yogurt, cheese, different kinds of veggies (carrots, strips of pepper, celery, broccoli, grape tomatoes etc), fruit (apple, orange, grapes, bananas, pears etc).

And you know, if he likes the same thing...maybe just let him eat the same thing? Is he bored with it?
