in a brine before cooking it??

We have always done this, and it is sooo super moist & juicy! Super easy to do, and if you have never tried it, I would highly recommend it one day.

Ours actually comes from Good Eats ( Good Eats Roated Turkey & Brine )

1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1/2 tablespoon allspice berries
1/2 tablespoon candied ginger
1 gallon iced water

Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.
Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining.

Remove bird from brine and rinse inside and out with cold water. Discard brine. Place on roaster ~ continue with cooking method as desired.

Where do you get candied ginger? You'll have to PM me with the answer, I doubt I will remember to look back here again.

I did PM you ~ but so in case others have the same question. You can just pick it up in the grocery store. We actually have McCormick's Crystalized Ginger ~ it's what we've used the last 5 yrs or so that we have done this.

We have a 5 gallon bucket from Home Depot that we wash out and use only for this purpose. That way you can close it up while it soaks.

I probably already know the answer to this, but here goes.........does the turkey have a "seasoning" taste to it after you bake it? Reason I ask, I use my left over turkey for turkey and noodles, and it wouldn't taste right if it had a flavor of ginger.
