I have always done my in the oven. Last Thanksgiving as a gift for hosting Thanksgiving, my MIL bought me one of those huge roasters. She was kind of in charge of cooking the turkey, since I had never cooked one in a roaster. It came out great! I cooked one of my many turkeys in the roaster this weekend and I thought that it was a little dry. I admit, I didnt not do anything to it while it was cooking since this one just ended up shredded/cut up and put in the freezer. Any tips for cooking turkeys in a roaster???

Kelli-I am thinking about doing the brine recipe you posted. Maybe that will be the magic trick.

We typically roast in the oven. One year we did one in the oven and then also a deep fried one. It was tasty!

A tabletop roaster. The bird cooks faster. It comes out very moist. My oven is free for other items. And most importantly - I can hold the turkey at a safe temperature until I'm ready to refrigerate it.

I have done both...the huge roaster is fantastic and I believe you will love it......the only draw back I have to it...is that it doesn't brown your bird.....so although it may not look like the cover a magazine it tastes fantastic!!

We usually cook in the oven.

Cook at 500* for 30 minutes then finish at 350* (again ~ a la Good Eats).

I bake it in a cooking bag, but the trick my dad taught us from when he was a cook in a resturant, is stuff the cavity w/ an onion cut up, a couple of sticks of celery and a piece of bread sprinkled liberally w/ poultry seasoning. Then rub the outside of the bird w/ butter all over. YUM!!!!
