Name: Amanda

Family Members: Husband Brock, Me and Sons Wyatt, Luke, and Bret.

State: South Dakota

Favorite Drink? Pepsi with ice

Favorite Vegetable? zucchini-sauteed with butter, fresh garlic and chopped onions

Favorite Dessert? snickers cheesecake

If I had to eat the same thing for the rest of my life it would be: anything Italian

Weirdest thing you ever ate? rabbit!

I didn't think I'd like ____, but I did! asparagus

Baking or Cooking? cooking

I seem to always add this ingredient: Garlic! I put it into almost everything

Kitchen Gadget/Utensil/Appliance I could not live without: Crock pot

I enjoy being in the kitchen because: I love to cook, it is my only “hobby”

If my kitchen could talk it would say “this” about me: Great cook, but man do you know how to make a mess!

I learned everything I know about cooking from: Lots of trial and error. I will experiment with any recipe.

What I try to teach my kids about cooking: I try to teach them about healthy cooking. I let them help me whenever possible. I also make them try everything at least twice before they decide that they really do not like it. I want my boys to be able to cook for themselves when they are grown.

Funniest cooking story: I was about 12 years old and I wanted to make dinner for my parents. So I found a jar of spaghetti sauce and decided that was what we were going to have. I got the sauce all ready and hot. All I had left was the noodles. I thought that the noodles were going to take forever to cook and I wanted dinner really close to being ready when my parents walked in the door. So I fill up the pot with water and put it on the stove. Than I get the great idea to go ahead and put the noodles into the pot of water to soak, than when my parents get home, I would turn on the stove and start cooking them. I thought if I soaked them, that I would cut the cooking time in half. Instead, they were stuck together when the water was starting to get hot. Than as the water boiled the rest of the noodles started to cook and they turned into a big ball of noodles. I couldn’t get them broke apart. So I end up serving my spaghetti sauce and huge noodle ball. My poor dad didn’t want me to feel bad, so he tried to cut off a chunk of the noodle ball with a steak knife, but the middle was hard and uncooked. It was so gross. I didn’t eat anything but the sauce and some garlic bread. Bless my dad, he choked down his plate of spaghetti a la noodle ball. I still get teased about that one.

My family LOVES it when I cook this: Southern Fried Chicken-Paula Deen recipe

Family Favorite Recipe:

Southern Fried Chicken

3 eggs
1/3 cup water
About 1 cup hot red pepper sauce (recommended: Texas Pete)
2 cups self-rising flour
1 teaspoon pepper
House seasoning, recipe follows
1 (1 to 2 1/2-pound) chicken, cut into pieces
Oil, for frying, preferably peanut oil
In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the house seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
Fry the chicken in the oil until brown and crisp. Dark meat takes longer then white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

MS Dish of the week is a fun way for us to get to know the Mommysavers members. Newbies to the board as well as regulars are welcome to participate. The Dish of the week is randomly selected a week in advance of her being featured. This is done so you can be contacted, informed of your feature date, and arrange to send a picture along with the included survey. Having a picture included is so we can make it a little more personal and put a name to a face. This is optional of course, as are all the questions being asked. If the survey is not received back from you before your “feature” date, the next member will be randomly selected and we will come back to you the following week. If you would like to participate please PM Kellynkay or Ryans_mom10 and we will get you signed up.

This story made me laugh so hard. Reminds me of my doggie meatloaf story (mommy2mercedes will remember). Bless your dad's heart for being such a good dad and eating it anyway.

Great story. We both love to add garlic to everything, but I'm kind of a chicken when it comes to experimenting with recipes.
