So my husband is SUCH a baby. He refuses to eat leftovers from Thanksgiving. So I have leftovers from a 17 pound turkey to eat BY MYSELF if I can't think of some recipes to use it up.

I can freeze it and I will. What are some of your favorite cooked chicken recipes? I know it won't be exactly the same, but I can get it close. Another twist is after a BAD week on weight watchers, I don't want to make REALLy high fat stuff. I might make a turkey noodle casserole once. I have a chicken tortilla casserole recipe that i can make a couple times that is good. What else? I don't want to make a huge pot of soup if DH won't the THOSE leftovers either!!! He's such a BABY!!!

TIA. I just can't afford to waste all this meat. My turkey cost $3.25 for 17 lbs.....I have to use it or I'll cry.

I'm all for you dividing the leftover turkey into portions appropriate for your family then freezing it. You can always defrost it later and add it to things like shredded turkey burritos, enchiladas, soup, salad (like tuna salad or chicken salad), tetrazzini, pot pie, and omelets.

Do not waste it. Check out the cooking forums for some great recipes gals posted last week for leftover turkey. I am actually doing one tonight.

One thing we have done is take some premade pizza crust (or pie crust if that's all you have) and rolling it out, covering it with leftover turkey, dressing (stuffing) and cranberry sauce (or not) and some cheese, and folding it over, calzone style and baking according the crust instructions.....yummmmmmy and it gets rid of alot of leftovers, not just the turkey. Do it, it's great!

Turkey Cranberry Wreath


2 pkg. refrigerated crescent rolls
1/2 C. mayonnaise
2 T. honey Dijon mustard
1/2 tsp. coarsely ground pepper
2 C. cooked turkey, chopped
1/2 C. celery, sliced
3 T. fresh parsley, snipped
1/2 C. dried cranberries
4 oz. Swiss cheese, shredded (1cup)
1/4 C. walnuts, chopped (optional)
1 egg, separated

Preheat oven to 375°F.

Unroll crescent dough; separate into 16 triangles. With wide ends of triangles toward the center. arrange 8 triangles in a circle on Large Round Stone. Corners of wide ends will touch and points will extend 1 inch beyond of baking stone. Arrange remaining 8 triangles in center. matching ends. Seal seams using pizza roller. (Points will overlap in center; do not seal.)

Measure mayonnaise, mustard and black pepper into a bowl. Grate cheese into a bowl. Mix filling. Scoop filling over seams of dough, forming a circle.

Coarsely chop walnuts; sprinkle over filling. Beginning in center, lift one dough triangle across mixture. Continue alternating with outer triangle, slightly overlapping to form wreath. Tuck last end under first.

Separate egg over bowl. Beat egg white lightly; brush over dough. Bake 25-30 minutes or until golden brown. Yields 10 servings.

Per serving: 363 calories; 17 g protein; 24g fat; 20g carbohydrates; 521 mg sodium


YOu don't have to use a baking stone just make sure you watch it so it doesn't burn. Also this makes a lot I also make it by cutting everything in half and only using one can of cressent rolls. HTH this is really yummy and so easy to make. Also you can arrange the cressent rolls anyway you want I never can do them in the circle the right way. IT never comes out for me right.
