This isn't a cookie but I made three batches last year. It was so easy and pretty. I packaged it in boxes bought from the craft store in little candy cups. It made great presents for teachers. Did I mention how easy it was??

INGREDIENTS

* 2 cups semi-sweet chocolate chips
* 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
* 2 teaspoons vanilla extract
* 6 ounces white confectioners coating* or deluxe white baking pieces
* 1 tablespoon peppermint extract
* Green or red food coloring (optional)

DIRECTIONS

1. In heavy saucepan, over low heat, melt chocolate chips with 1 cup EAGLE BRAND®; add vanilla. Spread half the mixture into wax paper lined 8- or 9-inch square pan; chill 10 minutes or until firm. Hold remaining chocolate mixture at room temperature.
2. In heavy saucepan, over low heat, melt white confectioners coating with remaining EAGLE BRAND® (mixture will be thick). Add peppermint extract and food coloring (optional).
3. Spread on chilled chocolate layer; chill 10 minutes longer or until firm.
4. Spread reserved chocolate mixture on mint layer. Chill 2 hours or until firm. Turn onto cutting board; peel off paper and cut into squares. Store leftovers covered in refrigerator.

This thread has actually turned into alot of fun......and you have really no idea how HARD this was for me....I realized how picky I am....I have favorites I like to eat...favorites I like to make....favorite choc one..white choc etc....apparently....I put ALOT more thought into my cookie trays than I ever realized(or at least more than anyone prob should..haha )


But here it is.....I like to make it,I like to take it,and I like to eat it.........gorgeous,deliscious and fun to make all the qualities I like........

~*~CHERRY SNOWBALLS~*~
~~~~~~~~~~~~~~~~~~~~

1 c real butter (no subs!!), softened
1/2 c powdered sugar
1 Tbs water
1 tsp vanilla extract
1/2 tsp almand extract
2 c flour
1 c quick-cooking oats
1/2 tsp salt
36 maraschino cherries, well drained(then lay between paper towels)

COATING:
2 c powdered sugar
1/4 c vanilla coffee creamer
2 c flaked coconut, finely chopped



Cream butter, sugar, water and vanilla.
Mix flour, oats and salt-gradually add to the creamed mixture.
Shape a tablespoonful of dough around each cherry, forming a ball. Place 2 in. apart on ungreased baking sheets.
Bake at 350 18-20 min,til bottoms are browned.
Remove to wire racks to cool.
Combine sugar and enough creamer to achieve smooth dipping consistency.
Dip cookies, then roll in coconut.

I actually use a small cookie scoop....stuff cherry in the middle and then lightly flour my hands and roll.....

these are a little bit or work........but worth every minute...............


okay....now I am leaving this thread before the urge to post my favorites in every other category get the best of me...........

LOL!!! Too funny! Don't worry, I won't ask about any other categoriesand stress you out even more! I was actually looking for a good recipe to make this year, so I figured your favorite had to be the best. It sounds great. I'm going to try it and I'll let you know how it goes over. Oh, and speaking of cookie trays, I have a question for you- cooking godess do you make one tray of mixed cookies (crispy and soft) or do you try to stick to all of one or the other or separate them? I always worried about mixing them so I make 2 trays. What do you do?

Its best to make 2....otherwise the crisp cookies will pull moisture from the soft ones and not stay crisp.So youre good the way youre doing it
